I couldn’t take it any longer! I finally gave in to the little whimpers from my family for cake and biscuits!
Time to put away the chewy bananas and oat cakes for a minute {although I actually can’t get enough of either} and let us indulge in a bit of naughtiness.
These little beauties are perfect if your favourite ice-cream flavour is mint-choc-chip.
Which mine is….! My mother always swore that it tasted like toothpaste. Obviously she has an uncultured palette! I mean anyone who likes rum and raisin….
…{I’d better stop before I have an online ice-cream war on my hands}!

Oooh it’s good! If I can churn out something edible from following the recipes, then it must be!

Like after eight mint cakes – lovely!
I think a few of the family members are unsure of their exotic taste and I’m getting comments like “can the filling not just be chocolate too?” I give up!!!
